This might be a silly thing to say—especially since the official website states otherwise—but technically speaking, wasn’t Mercedes’ official F1 debut back in 1954 with K. Kling? And if that’s not the case, then why is Red Bull’s debut considered to be in 1997, even though it was Jaguar before that?

The distinction here is between Mercedes-Benz's original participation in Formula 1 and the history of the current Mercedes team.
Mercedes-Benz officially debuted in 1954, with Juan Manuel Fangio, Karl Kling and Hans Herrmann. However, the current Mercedes team's lineage dates back to Tyrrell in 1970, through BAR, Honda and Brawn GP.
Similarly, Red Bull Racing traces its origins to Stewart Grand Prix in 1997, which became Jaguar in 2000 and Red Bull Racing in 2005.
That's why these dates appear in the respective team profiles, although the way "First Team Entry" is recorded isn't entirely consistent across all F1 teams.
